I finally made the blackberry mousse cake this weekend as Jeffrey's delayed birthday cake. The idea began with Maiko. She said Bakery Cocola made wonderful blackberry mousse cake and she had it for birthday since she had known it. It makes me curious and want to make it. Vera made it to happen by giving me a box of blackberries. Since Jeffrey's birthday is around, actually, past, I made it at last.
It's made of sponge cake, white chocolate mousse, blackberry mousse and raspberry glaze. As the purees are all from fresh fruits, it tastes fresh, almost like an ice cream. Jeffrey liked it. Blackberry mousse cake does make a fabulous birthday cake! It works out with other kinds of fruits, like passion fruit, coconut, etc.
