Spring cookie boxes all done

       Improvements in the spring cookie box. I changed the size of sesame and almond cookie to 6*4.5cm to fit the cellphone bags and have a better look. The sugar level adjusted to 65% for sesame and 60% for almond to set the sweet tone of the cookie. Black sesame cookies was cut to 3 millimeter thick and almond cookies about 4 millimeters. I still have lots of irregular ones, but cutting skill improved a lot this time. To cut the cookie even and thin, the dough needs to be the neither too soft nor too hard. When I cut, I move my knife slowly with an even speed, never go too fast like chopping vegetables. It is important to have the same thickness for all cookies to assure the baking. Pay close attention to baking otherwise cookies get burnt.
        For cheese cookies, I added 50% more of rum to enhance the taste and used Edam cheese, which has a sweeter and more creamy texture than gouda. Truffle cookies stay the same.
       
       The poem and the painting:

     The poem was written by Wang Sizong from Song dynasty. It was originally to express the yearning of a pastoral life other than accomplish great goals through conquering and military service. The artist Feng Zikai did a painting to illustrate the poem: sell the sword, buy the cattle and teach his offspring. I find it quite relevant to the season and to our hope of peace. Hope to “see the nations turn their swords into plowshares” like in Michal Jackson’s song.
