I want to share with you an extraordinary moment from class. When we were mixing the pastry cream, I missed catching the spinning mixer, and a large piece of pastry cream flew off and spread across the countertop. Everyone suddenly became frozen. (What? So careless! How clumsy. It's such a waste. Now we don't have enough…) Although many thoughts flitted through my mind in a second, I quickly saved some usable cream, cleaned up the mess, and apologized. Luckily, we had enough cream as I had planned for extra.
In each class I taught, we had some 'accidents.' I often planned carefully to avoid something from going wrong. Now I know that no matter how well I plan, for sure something will go 'wrong,' and that is OK. As Junko said, it's okay to make mistakes.
